Ingredients -
For the Crust: - Grand’s Biscuits (1 can) - For the Filling: - 1-2 ripe red tomatoes, sliced - 3 slices of bacon, cooked and crumbled - 1/8 cup chopped onions - 1/8 cup chopped green bell peppers - 1/2 cup mayonnaise - Mozzarella cheese (to taste) - Black pepper (to taste) - Italian seasoning (to taste) Instructions1. Prepare the Crust:
- Preheat your oven to 350°F (175°C). - Spray an 8- or 9-inch cake pan with cooking spray. - Open the can of biscuits and press them into the bottom of the pan, pushing some dough up the sides to form a crust. Alternatively, you can roll it out with a rolling pin. - Bake the crust in the preheated oven for 15 minutes. 2. Cook the Bacon: - Place bacon on two paper towels and cook in the microwave for about 2 minutes, or until crispy. 3. Sauté the Vegetables: - While the crust is baking, slice the tomatoes. - In a small pan, sauté the chopped onions and bell peppers in a bit of the reserved bacon grease until they are soft. 4. Assemble the Pie:
- Once the crust is baked, remove it from the oven and scoop out a small portion from the center to create a well for the fillings. - Layer the sliced tomatoes in the crust, sprinkle with black pepper, and evenly distribute the sautéed onions and peppers on top. - Crumble the cooked bacon over the vegetables. - In a bowl, combine the mayonnaise and mozzarella cheese until mixed well, then spread this mixture over the pie. Sprinkle with Italian seasoning for an extra punch of flavor. 5. Bake: - Return the pie to the oven and bake at 350°F (175°C) for 40 minutes. If using a toaster oven, you may want to reduce the temperature to 325°F (160°C) for the last 30 minutes of baking. 6. Serve: - Once baked, allow the pie to cool slightly before cutting it into slices. Enjoy this mouthwatering Bacon Tomato Pie warm, and watch as it becomes a favorite comfort food! |
