RECIPE
Ingredients
- 2 1/2 CUPS SUGAR
- 4 EGGS
- 2 TSP. VANILLA
- 1 CUP COOKING OIL
- 1 1/2 TSP. CINNAMON
- 1/2 TSP. GROUND GINGER
- 2 1/4 CUPS SELF RISING FLOUR
- 1 CUP CHOPPED PECANS
- 3 CUPS PEELED AND GRATED CARROTS
- 1 SMALL CAN CRUSHED PINEAPPLE
- 1/2 CUP GOLDEN RAISINS TOSSED IN FLOUR
- Combine sugar, eggs, and vanilla in a bowl and mix well. Add cooking oil and spices, then add flour and mix well until blended.
- Add pecans, carrots, raisins, and pineapple before mixing on medium speed for one minute
- Pour into two well greased 9 inch round pans and bake at 325' until golden brown and set (about one hour)
- Remove from oven and place on wire rack to cool. Cool for fifteen minutes before flipping out on parchment paper to ice (use cream cheese icing)
- For a lower calorie recipe use 1/2 cups less sugar and bake in large loaf pan before serving like poundcake.
