PUDDING:
- 1 BOX VANILLA WAFERS
- 3/4 CUP SUGAR
- 4 RIPE BANANAS
- 2 TBSP. COCOA
- 3 TBSP. CORN STARCH
- 1 CUP EVAPORATED MILK
- 1 CUP WATER
- DASH SALT
- 2 LARGE EGGS
- 2 CUPS HEAVY WHIPPING CREAM
- 1 TSP. VANILLA EXTRACT
- 1/3 CUP POWDERED SUGAR
- In a glass batter bowl add sugar, cornstarch, cocoa, and dash of salt. Whisk ingredients well. Add eggs, milk, and water. Whisk well.
- Microwave on high for 3 minutes. Take pudding out of microwave and whisk making sure to whisk corn starch off bottom of batter bowl. Put it back in microwave for 2- 3 more minutes until thick and creamy. Batter should be thin enough that it is pourable off of a spoon. If it is too thick, your final dessert will be dry. Add: 1/4 STICK SALTED BUTTER 1 TSP. VANILLA And whisk well.
- In a casserole dish layer as follows: 1/2 of pudding, vanilla wafers, sliced bananas, top with remaining pudding and refrigerate until cold before adding topping.
- Whisk topping ingredients until creamy and spread on top of cold pudding. Enjoy!
