Ingredients
  • 12 eggs
  • 1 cup heavy cream or half and half
  • 1 lb pork breakfast sausage
  • 16 oz. shredded cheddar cheese (or cheese of your choice)
  • 1 small can of mushrooms (optional)
  • 1/2 large onion, chopped
  • 1 green pepper, chopped
  • Salt and pepper
  • 2 tbsp. butter or margarine
  1. Grease a 9" x 13" pan. Break eggs into pan and poke each yolk (or lightly scramble).
  2. Pour cream over eggs and add half of shredded cheese.
  3. Brown sausage and drain. Add mushrooms and onion to sausage and cook with margarine or butter. 
  4. Place sausage mixture over eggs evenly and cover with remaining cheese.
  5. Bake at 350 for 45-60 minutes.
  6. Serve!
