Ingredients
IMPORTANT: Do not thaw coconut in microwave it will spoil.
- 2-6 OZ. BAGS FRESH FROZEN COCONUT (THAW IN REFRIGERATOR)
- 1/2 CUP- CAN OF CREAM OF COCONUT OR COCONUT MILK
- 1 PEPERRIDGE FARM FROZEN THREE LAYERS CAKE (LEMON OR COCONUT)
- 2 TBSP. SUGAR ADDED ONLY IF USING COCONUT MILK
IMPORTANT: Do not thaw coconut in microwave it will spoil.
- Mix coconut with cream of coconut (or coconut milk). Add sugar if using coconut milk. Take top layer of cake off with spatula and put a layer of coconut mixture inside layer.
- Place top layer back on and pile remaining coconut on top and along sides of cake. Cake must be refrigerated and should be wrapped with plastic wrap.
- Decorate top with fresh fruit if desired. Cake can be frozen up to 3 months. Enjoy!
