RECIPE
Ingredients
- 1 CUP VEGETABLE SHORTENING
- 1 1/2 CUPS SUGAR
- 3 LARGE EGGS
- 1 TSP. VANILLA
- 1 1/2 CUPS MINCEMEAT (NOT BLOCK TYPE)
- 1/2 TSP. SALT
- 1 TSP. BAKING SODA
- 3 1/4 CUPS ALL-PURPOSE FLOUR (WHITE LILY)
- Mix shortening and sugar together until creamy. Add eggs one at a time. Add vanilla, mincemeat and mix well.
- Add two cups of flour. Mix well. Add soda and salt. Mix well. Add remaining flour. Drop by teaspoons out onto parchment paper lined cookie sheet or a cookie sheet sprayed with cooking spray.
- Bake 12 minutes at 400 degrees. Makes a large batch of cookies. Dough can be frozen or refrigerated.

Option: These are soft cookies, for a crunchy cookie add 2 teaspoons of cream of tartar to batter when you add the soda.
