Ingredients
- 2 CUPS COOKED SWEET POTATOES
- 3/4 CUP PACKED BROWN SUGAR
- 3/4 CUP GRANULATED SUGAR
- 8 OZ. CREAM CHEESE (ROOM TEMP)
- 1/2 STICK SALTED BUTTER (ROOM TEMP)
- 3 EGGS
- 1/2 CUP MILK OR WHIPPING CREAM
- 1/2 TSP. CINNAMON
- 1/4 TSP. NUTMEG (OPTIONAL)
- With a whisk attachment use mixer and beat potatoes until creamy (put in bowl and set aside.)
- Add sugars, cream cheese, and butter to mixer-mix until fluffy. Add eggs, potatoes, milk, cinnamon, nutmeg and whisk well.
- Pour in 9” unbaked pie shell. Bake 50 minutes at 325 degrees.
